Every now an then, we'll be showcasing one of our favourite main course meal ideas which you can try out for yourself and your family or dinner party. We'll try to link up the recipes with the special offers or seasonal availability so that you can gain the benefit and bask in the admiration of your peers and loved ones!

Try this yummy recipe, courtesy the Meat and Livestock Commission, and take advantage of the beautiful quality local meat that's available at the moment.

Roast Pork Loin

Take...

Lean pork loin joint
(or leg / shoulder)*
8 rashers Lean Back Bacon
30ml Oil
15ml Salt
900g Potatoes
6 -8 small Pears
450g Sausagemeat
2.5ml Ground Cinnamon
1 Eating Apple
150ml Rum

* allow 100-175g of boneless raw meat per person or 225-350g for bone-in joints.

time to cook:
Medium ~ 25 minutes per 450g/1lb plus 25 minutes
Well done ~ 30 minutes per 450g/1lb plus 30 minutes

 

Make...

If you like crackling, dry the rind of the LEAN PORK LOIN JOINT, score and rub it with 15ml (1tbsp) OIL and 15ml (1tbsp) SALT.

Place the LEAN PORK LOIN JOINT on a rack in a roasting tin and open roast in a pre-heated oven for the cooking time calculated as above.

50-60 minutes before the end of the cooking time, add 900g (2lb) POTATOES, peeled and cut into large chunks, and 4-6 whole small pears to the roasting tin (or in a separate tray) and drizzle with 15ml (1tbsp) OIL.

Meanwhile make the stuffing: mix together 450g (1lb) SAUSAGEMEAT with 1 small PEAR cored and cut into chunks and 2.5ml (1/2tsp) cinnamon. Shape into eight balls and wrap a rasher of BACK BACON around each. Bake for 30 minutes.

To make the sauce: place 1 EATING APPLE, cored and cut into chunks, 1 PEAR, cored and cut into chunks, 150ml (1/4pt) RUM and 3.5ml (1/2tsp) CINNANMON into a saucepan. Cover and simmer for 15-20 minutes. Remove the lid for for the last 5 minutes of the cooking time until the fruit is softened and most of the rum evaporated.

Eat...

Serve the Pork Loin with the Stuffing, roast potatoes and Pears, Seasonal green vegetables, and apple and pear sauce.
